The Four Most Delicious Chia Seed Puddings

Lets face it eating healthy every day can be hard at times. Everybody gets moments when all they can think about is CAKE! Well we definitely do, so here's one of our top puddings you can have for breakfast, lunch or dessert. Basically whenever you have cravings, Chia seed pudding is the answer!  

Chia is a protein packed seed originally born and bred in Mexico. They’re high in Omega 3 fatty acids and soluble fibre. The word “Chia” means strength in the Mayan language and back in the day the Aztec warriors used to eat a teaspoon of these super seeds a day and it would fuel them for the day.

Basically these energy boosting bad boys are not only Chialicious they are ridiculously good for you. So at the Four Things HQ we’ve been recipe testing and have figured out our four favourite Chia Seed puddings, so here goes.

Vanilla Dream Chia Seed Pudding

4 tbsp chia seeds

1 tsp agave syrup/ honey

2 tbsp coconut yoghurt

1 vanilla pod/ 1/2 tsp vanilla extract

250ml almond milk

Method

Mix the chia, agave, vanilla, coconut yoghurt and almond milk together until it's as smooth as you like it. Pour into a sealed container and let it set in the fridge for at least 8 hours. When we make our chia puddings we always make the night before so it is just perfectly set in time for breakfast.

Matcha Chia Seed Pudding

2 tbsp chia seeds

1 cup Almond milk

1 tbsp gluten free oats

1 tbsp lemon juice

1 tbsp maple syrup/ agave syrup

1 teaspoon vanilla extract

1/2 teaspoon Matcha

Packed with plant-based omega 3’s from the chia, antioxidants from both the chia and matcha, this is the perfect breakfast pudding. The caffeine is equivalent of a cup of coffee without the acid so not only is this delicious it will get you buzzing for the day.

Method

Blend together the oats, lemon juice, syrup, almond milk, matcha and vanilla, once smooth pour into a bowl and add in the chia seeds, mix together and let it set in the fridge overnight and voila, wake up to this superfood, dairy free breakfast dream boat.

Berrylicious Chia Seed Pudding

2 tbsp chia seeds

1 tsp agave syrup/ maple syrup/ honey

1 tbsp coconut yoghurt

1/2 tsp vanilla extract

1/2 lemon juice/ zest

250ml almond/ coconut milk

1 cup of raspberries fresh or frozen

Method

Blend the berries, vanilla extract, yoghurt, lemon juice and milk together, add in the chia and syrup of choice of sweetness, seal and leave to set in the fridge overnight. Sprinkle some fresh berries or coconut on top. Dessert for breakfast yes PLEASE!

Nutter Butter Chocolate Chia Seed Pudding

2 tbsp chia seeds

250ml almond milk

1 tbsp Almond/Coconut/Peanut or Cashew butter

1 tbsp cacao

6 medjool dates (pitted)

1/2 teaspoon vanilla extract

Sprinkle on any topping you like, cacao nibs, granola, flaked coconut, almonds, banana, cinnamon, goji berries or even a few extra chia seeds.

Method

Blend the dates, nutter butter of choice, cacao and vanilla, once smooth mix in the almond milk and add in the chia seeds. Leave in the fridge for at least 4 hours, until it sets and get this guilt free deliciousness in your belly, before anyone else does!
